Brunch Restaurant Las Vegas
Meet your new poolside haven. Fuel your time in the sun with the Spritz Bubble Waffle. It’s served with whipped butter, Nutella, and caramelized banana for brunch lovers who love the sweeter things in life. If savory is more your speed, there is plenty to choose from. Snacks, salads, pizzas, and more—it’s all here. Try the Salmon and Gillfunkel Sushi Burrito for a seafood option with a kick. Is your mouth watering yet?

The Italians know their way around refreshing cocktails. The restaurants made their spritzes even better by making them bottomless. We’ve redefined outdoor dining on the Las Vegas Strip. Designed in partnership with NOVUS Architecture, they created a natural chic vibe inspired by Malibu. Comfortable and colorful with elegant finishes and modern lines, the raised planters and elevated daybeds offer a relaxing view of the pools. The finer details include encaustic floor tiles, mosaic tile column wraps, draperies that evoke sea waves as the wind rustles the fabric, and jute rope accents complete the beachside aesthetic. Eating breakfast, brunch, or lunch poolside is made all the better while lounging in the shade at Spritz.

Bernard Camat
Bernard Camat, Executive Chef of Spritz Restaurant & Bar and CAPRI Pool Lounge & Bar at the Venetian Las Vegas brings a wealth of experience to both poolside outlets operated by 50 Eggs Hospitality Group.
Originally from the island of Guam, Chef Bernard moved to Las Vegas at a very young age to attend culinary school at Le Cordon Bleu in 2005. From there, he landed a job as a line cook at Roy’s Hawaiian Fusion and worked his way up through the ranks in celebrated restaurant kitchens both on and off the Las Vegas Strip to become head chef for the past decade.
With a strong Filipino heritage, he credits his success in culinary arts from being raised with all the traditions and culture surrounding the food prepared by his parents and grandmother, and he is a believer that there’s truly nothing better than a simple bowl of ramen done right.
Chef Bernard’s passion for multiple styles of cuisine and is reflected in the diverse menus he presents at Spritz and CAPRI throughout pool season, offering something for everyone from healthful to indulgent and only using the highest quality ingredients available throughout the spring and summer months.

Walk straight through the Grand Colonnade and enter The Venetian casino floor. Use the right-hand walkway until you reach the entrance to The Venetian tower guest elevator bank. Take the elevator to Level 4. Enter The Venetian pool deck and turn left—Spritz Restaurant & Bar will be straight ahead.

Take the parking garage elevators to Level 3 Lobby/Casino. Exit the elevator bank and enter the hallway to your left. Continue straight through the hallway until you reach the entrance to The Venetian tower guest elevator bank on your right. Take the elevator to Level 4. Enter The Venetian pool deck and turn left—Spritz Restaurant & Bar will be straight ahead.

Enter The Palazzo casino floor and turn right, using the right-hand walkway until you reach The Waterfall Atrium. Go past the LOVE sculpture and through Restaurant Row until you reach The Venetian casino floor. Take the left-hand walkway until you reach the guest elevators. Take the elevators to Level 4. Enter The Venetian pool deck and turn left—Spritz Restaurant & Bar will be straight ahead.
